In the system tray, click on the shield to bring up Windows Security, Virus and threat protection, manage settings under Virus and thread protection settings, at the bottom under Exclusions click add or remove exclusions, add process jellyfin.exe.
I don't know for certain that this will help. I had already migrated to Linux by the time I discovered this exclusion process. But I remember that Windows Defender would use up like 30-50% of my CPU when I was direct playing.
