I wanted to just provide a brief update to this. I'm afraid I've solved in a rather unhelpful way- I deleted everything about how I configured Jellyfin originally, purged every docker image I had of it, and then re-pulled it, starting from fresh. With the current variables set up in the docker-compose and hardware acceleration re-enabled using Nvidia, I can confirm it is now working, and can verify hardware acceleration is happening via nvidia-smi in the terminal.
I know this won't be helpful to people looking back for ideas on what went wrong, and I do apologize, but it is now working correctly. Thank you to the user who helped me.
