I was able to resolve the problem additional mounting/adding the Library folder you have to assign the permission to the Library folder. Since Jellyfin is using the USER ID 568 it needs to give read (write if you like) to the Library folder.
Under Dataset select the Library folder, click on edit permission and add click add item. Now select the users: apps its user id is 586. Give the necessary permissions, check apply permission recursively then save the access control list.
Now JellyFin should be able to read the Library content.
