1. Turn off WIFI? What OS is your server running? Can't give specific instructions without knowing that.
2. Your server, or whatever is running Jellyfin, can use any method to connect to your network. It really doesn't matter as long as it is fast enough. You just need to know the IP address to use that to connect from other clients.
3. If your client can run tailscale then that is probably the simplest solution. Install it on both the server and your client.
