Stop Jellyfin then edit this file
C:\ProgramData\Jellyfin\Server\config\system.xml
There will be a line near the top that is called IsStartupWizardComplete. Switch that from true to false. Start Jellyfin. It will walk you through the initial setup and allow you to re-create the admin account name and password. Skip the rest of the steps.
