1. Check the jellyfin logs for clues.
2. Check in the jellyfin dashboard, not in Kodi, if the user has permissions in jellyfin to delete from that library. I'm not sure if this is the same setting you said you checked in Kodi's UI.
3. Check in unRAID that whatever user Jellyfin is running as has sufficient permissions.
