I BELIEVE they are talking about inclusion of casting support and Youtube trailers. The web configuration link in that section has this in it.

I'm assuming if someone cares about their Jellyfin being absolutely offline and absolute privacy, these may be considered features that "phone home" to Google. But, as the doc states, these can be turned off if this is a priority for someone.
