100% go with Intel. Intel's QSV is several generations ahead of AMD in terms of quality per bit rate and driver support in Linux is better with Intel.
Gaming motherboards have a lot of extra and frills you probably don't need. Just get whatever board, from a reputable brand, that has the SATA or USB ports and connectors you need.
