Pick a show or movie and refresh metadata, select "replace all metadata" and check replace images. Jellyfin will attempt to recreate the trickplays and re-extract chapter images.

How do the logs look when you do this?

Jellyfin 10.10.7 (Docker)
Ubuntu 24.04.2 LTS w/HWE
