Country is very important for metadata.
- The rating systems between different English speaking countries is not the same for example.
- One might also want to set the language to English while not living in an English speaking country for example.

I'll give you an example so you understand , I know you are from the belgium  country , you must choose your language
if you go abroad to Indonesia or to India , You keep using your language belgium country or English , in your laptop or in all your documents

So what's the point of setting country settings??

The point is that different countries will have differences in their official languages, despite being the same language.

Example:
United States of America: Color
Every other English speaking country: Colour

Another example is Spanish. Did you know that Spanish spoken in Mexico is different in some ways as compared to Spanish spoken in Spain?

I think you're misunderstanding here. You're not supposed to keep changing the country. You just set it once for your preferred language and forget about it.
As in, if you're most comfortable with Spanish from Mexico, choose Mexico. If you're most comfortable with Spanish from Spain, then choose Spain.
