I think I might have found a solution.

Move the folder(s) that are giving the doubled information to somewhere Jellyfin doesn't access them.
Scan your media library so that it recognises the files are no longer there.

Double check your files are all correctly tagged.

Move them back to the media folder

Let Jellyfin scan them again.
