For me, both times I upgraded recently it changed the user of the Jellyfin service from "local system account" to a network service account. For me, Jellyfin would not even start up, but once I changed it back to the local system account, it seemed to work fine.
After reading your posts, it makes me wonder if it remembers some past state of that service and applies it upon upgrade.
The last time I upgraded, it needed the new LDAP on top of all this so I was locked out for a while too.
