Okay so after a dreadful amount of testing I have come up with a solution to my issue.
I tried various HTTP proxies such as xteve, threadfin and HLS proxy. All are about the same and no matter how much tinkering or what buffer you use the issue was the same for me(Some setting the buffer to 1mb with VLC was decent but didnt resolve the issue). Would play for about 5-10 minutes and stop playing. The logs from these services show no issues from the live stream connection its self. Jellyfin still had the same logs that show the client is just disconnecting and nothing more. I started to play with differnt server versions because if I have this issue on every client its just a server issue. I found that jellyfin 10.8.13 server plays Live tv very well without having these hiccups. However the jellyfin apps on firetv and other clients say that the server is too old to add it and wont let you connect. You can download a browser on these devices (Fire TV has amazon Silk) you can connect to your instance and watch live tv that way without issues.
