I just remembered something. I had this issue a few months ago. You have to clear the two appdata folders, which is sounds like you did, but you also have to go into the server's dashboard and remove all the tokens for JMP.
Dashboard > Devices
Find all the instances of JMP there and delete them. Clear appdata again and try logging in.
C:\Users\yourUser\appdata\local\jellyfinmediaplayer
and
C:\Users\yourUser\appdata\local\Jellyfin Media Player
Dashboard > Devices
