Playback Problems

I'm very new to Jellyfin using version 10.9.11 on Windows 10 Pro, and just trying to get things working right. The video port connection being used is a DP at the PC and runs to a HDMI port on my TV ( DP to HDMI cable ). I'm just using the motherboards video. I assume this DP connect is adequate and I don't require a HDMI card? I'm using Make MKV to rip my DVD and Blu rays on to my hard drive. I haven't tried watching any of the ripped titles all the way through to the ending, but it seems like the DVDs have ripped fine from what I have noticed. However many ( not all ) blu ray movies I'm ripping are having playback problems. Some freeze up like Star Wars Episode 1 during the story introduction and don't resume unless you skip the chapter. Some have numerous momentary video distortions. Some movies have millisecond pauses throughout the movie playback around every 5 to 10 seconds. I've tried re-ripping some of the movies but get the same results. I am just using the files directly from Make MKV in my library. I haven't used Handbrake yet. I do not have extensive computer knowledge nor extensive knowledge of some of the programs like Make MKV. I would be okay with down grading some of the video content from 1080P to 720P, but haven't looked into this yet. I'm not trying to set this up to host a server, so it would seem the processing power of my PC should be fine. I'm okay with having Jellyfin run just on this device or perhaps to one other device or PC in my home. This is what system I'm using. From what I have read it should be fine to run the Jellyfin etc. My system:

- 2 new internal seagate enterprise hard drives ( non refurbished ) 20TB and 18TB

Not that I know how to change it, but could the ripping speed of my Blu Ray burner be too high to the hard drive creating errors in the playback? Also trying to set up a second path to my second internal 18TB hard drive, but haven't quite figured out how to do that. Would appreciate some help. Thanks
