If you want to delete the old data and start over with the package (SynoCommunity Jellyfin package I assume), you're going to need to:
Assuming you're on DSM7, what I suggest to do if that's complicated for you is to use the Container Manager app to launch Jellyfin that way.
Since you're dealing with Docker containers, the old data from the package will not affect your new Jellyfin server in the container.

Also, relax a bit. Your media files are not lost. You only need to set up Jellyfin again.
- Enable SSH in the control panel
- Log into your Synology's NAS using SSH (on another computer, not the NAS itself)
- Navigate to "/volume1/@appdata"
- Find and delete the Jellyfin package there
