So if I understand correctly, volume1 is your hard disk and on this hard disk you have a folder called Video. And you want to set up another folder there called “TV” and then link it in Jellyfin?
From my point of view.
I also use an external drive. On this drive I have a folder called Movies. In this movie folder I have several subfolders (example: series, scifi, action, horror etc.).
And that works quite well. I then use a separate category for each subfolder in jellyfin. So you can see the categories Horror, Scifi etc. at the top of Jellyfin.
So that should work for you too.
What else you can do, if you go to the settings of jellyfin and then to Libraries, you can also add further folders to a category.
Click on the 3 small dots next to a category and go to Manage library. At the top you will see the word “Directories” and behind it a plus symbol. Click on it. Now you can add more directories to the category. This also works with other folders, regardless of which drive they are on.
I hope this helps you.
