The films are then updated. As far as I know. Jellyfin does this automatically after a few minutes. Or you can trigger the scan yourself manually. However, this may change the order of the movies on the main page. So the last thing you added will no longer appear in the “Newest” tab. Jellyfin will simply re-sort the files depending on the time of the scan. Unfortunately, I don't know how Jellyfin does this.
I often exchange movies when I have converted them to a different format. Even if the name of the new file is the same as the previous file, Jellyfin changes the order in the “Newly added” category on the start page. Also, if the movies are not labeled correctly (name + year), it can happen that the covers are not downloaded correctly from the Internet and you have to enter them again by hand.
