I looked at your screenshots. You didn't specify the port correctly.
Stop the Jellyfin container, go to its settings and add "8096" to where it says "Local Port" (nested under "Port Settings"), then restart it.
If it worked before when you selected Host networking instead of bridge, it's because you didn't need to specify the port for host mode.
With bridge mode, you do. And since you are missing the local port, you can't access it.
