You'd need to delete /etc/jellyfin/network.xml to reset the port jellyfin uses. I don't think the /etc/jellyfin directory is touched during an uninstall nor a purge.
My roommate has an emby server running on our network and it uses 8096 as its port as well. when we tried to connect to jellyfin away from home. the ports got confused and only allowed emby to be used on port 8096. so we tried moving the port to a different port, hoping it would work. and in the web interface i hit shutdown, and the server never came back up after that.
Ill look for that file right now
