The log looks normal. That compatibility, error 99% of the time, is because jellyfin is trying to transcode but the transcode is failing for some reason. Usually because it can't access the GPU or drivers aren't installed.
There are old reddit threads and some git hub pages that might help (Google "jellyfin truenas core"). You will need to configure proxmox to pass your GPU into the TrueNAS core VM then you need to configure the Jellyfin jail/container to pass the GPU into the jail.
For the record, TrueNAS CORE is not officially supported. Mainly because it is FreeBSD based. As such, there is no official documentation to walk you through the process.
I don't use Proxmox nor TrueNAS core so I can only give you general guidance. If someone comes along to help, great. But you will likely need to either look around the Intertubes or go to the Proxmox/TrueNAS core forums/subreddits to ask about specifics.
If you aren't married to using TrueNAS core and/or Proxmox, we can guide you through alternate setups that are supported and well documented.
