I am by no means the most experienced, but I have had a lot of luck with the HP Slim S01-pF2033w I purchased off eBay for $200 after tax and shipping. I do not have a dGPU in it because I only have 1-2 streams with maybe 1 with transcoding. The iGPU of the 12100 is plenty for me. It's quiet and I got an HBA card for future expansions.

Jellyfin 10.10.5 (Docker)
HexOS(TrueNAS)
Intel i3 12100
OS Drive: 500gb Crucial SSD [NVMe]
Storage: 1TB Kingston SSD [SATA] in stripe (I'm on a tight budget)
