So, armed with the knowledge that Amazon's awful, ad-ridden launcher is what's causing this problem and not the Jellyfin android TV app, I think I've managed to solve this issue. It requires having adb installed on a pc, having adb/developer options enabled on your firestick, sideloading of custom launcher apps, and running a couple sh scripts to remap your home button to a custom launcher. Also, I disabled auto-updates as I'm sure Amazon will eventually update and disallow this type of modification.
From instructions in this thread, I installed Launcher Manager (Mini) on my Firestick 4K and installed Projectivity Launcher. After that, I followed the instructions from this post, paired with the updated .sh files from this post (to map my home button to Projectivity instead of the default Firestick homescreen).
After these steps, my activity logs are no longer spammed every five minutes by connections/disconnections from the android TV app.
