Netflix's interface is designed around discovering new content. Jellyfin on the otherhand is related to orgsnising your existing media.
As you've already discovered, you can select genres in Jellyfin, but if you want a Netflix-like interface, you can use one of the Jellyfin plugins for Kodi, and then use your Kodi skin of choice to achieve your desired look.
I disagree, there is a strong overlap in target audience. I have a large library that I am sharing with friends and family. A netflix like UI would is great for discovery. Moreover it is excellent at categorizing and grouping types of content together. If it is Christmas time I want all of my Christmas movies to be grouped together. I do not want to have to make new collections.
