1. Go to Dashboard > Libraries > Display. Check "Group movies into collections". However, this grouping does not happen with TV shows. You'd have to navigate to the collections "library" for TV show groups.
2. Other than manually creating the playlist, I am not aware of a plugin or external app to do this. You can add an entire series to a playlist in one go. From my testing, it appears that it does add the episodes of the series in order.
However, if you're talking about in-universe "Star Date" order of those three Star Treks, that would require a lot of manual work. If you're talking about AIRING date, I'm not aware of a playlist sorting function in Jellyfin for air date.
