I've encountered that bug. It's kind of rare, but that isn't the issue here. I've solved it much as you suggested, swapping to any other subtitle language (or off) and back to English and it would work.
This is something else entirely though. I've tried accessing the same show through my browser and sometimes it will show subtitles there where the linux client isn't. I've noticed the font looks off. Maybe related. But as I said, I can watch episodes which previously did work and they won't, until they will for no reason and with no changes made on my side besides doing something else for an hour or so. Sometimes I'll leave the episode up to see if it'll work periodically (it usually won't); sometimes I'll leave it up and go play a game for an hour, then return (sometimes it will); still others I'll shut down the Jellyfin client entirely and come back later and the same episode will work just fine.
