I'd like to update that currently jellyfin do support zh-Hans and zh-Hant as the language code to distinguish between Chinese(Simplify) and Chinese(Traditional) instead of only using codes from ISO639. Everyone looking at this post at the future could have a try and do not need to raise issue or questions in this forum or github.
