Hi, I'm using the same NAS. First, you don't have a port on your IP. It's typically 8096, so 172.17.0.2:8096. If you launch Jellyfin from the Docker container, you'll be able to see the full address being used. If you want to use Jellyfin away from your home network, you'll need to find your internet-facing IP which (so far as I've seen but it may just be mine) begins with 50. I've done this but I'm not clear about the steps so YouTube tuts are your friend here.
Also, I'm not sure WHICH eero pro you're using. I *think* there's a really old pro model. Every eero prior to 6E (including 5, 6, 6 pro) is only 1 gig ethernet so you'll only hit 100Mb/s which isn't sufficient for 4k streaming. I actually just learned this last night after rebuilding my entire network and running cat 6 cables through my walls only to discover this. I ordered a single 6E as one of the 2 ethernet ports on the 6E is 2.5gig. Alternatively, you can *probably* use a wifi to ethernet 2.5gig adapter directly from the NAS which should be a simpler solution. It's odd that Ugreen didn't include wifi in the year 2025.
