100+ ffmpeg proces

hi, I'm using the latest stable version of jellyfin with docker on ubuntu. sometimes it happens that there are hundreds of ffmpeg processes but with maximum 2/3 direct streaming. I didn't find much useful in the logs also because when this happens I can't even access the jellyfin web interface and it completely stalls until the container is restarted. Does anyone know what could be causing this problem? I attach the photo of the processes

Is there a scan going on in the background? It could be chapter image extraction, keyframe extraction, jellyscrub, adding a bunch of new media, etc. How to say without logs.
