I found my mistake. "System internal" permissions inside the NAS Shared Folder. Jellyfin did not have permission to read/write inside the folder. I totally forgot that I did this when I initially set up my Movie library. I deleted the old Shows library inside jellyfin and created a new one after giving it permissions on the NAS. Now it works.
So far all topics I searched that mentioned permissions it never was specified where to change them. I assumed it was something inside jellyfin but obviously that was not the case. I hope this is to anyones help in the future.
