No idea. What kind of subtitles are they? PGS? SRT? ASS? DVDSUB?

What client is this? And does it only happen with this client?

I recall seeing an issue where Jellyfin (or the backend media player) didn't correctly apply a transparency, but that was with ASS subs. But it could be the same underlying issue.
It may be worth testing if this problem exists with this particular movie with unstable. Since you are already running docker, make a second docker container with identical parameters but a different config path and using the "unstable" tag instead of "latest".

Try Jellyfin Media Player and see if the transparency issue also happens there. Regardless, submit an issue on the Jellyfin git and provide as much info as you can. Mainly the media info and ffmpeg logs.
https://github.com/jellyfin/jellyfin/issues Definitely a strange issue.

Decided to test in the Web Player, where it behaved normally which is weird. I have created a ticket on the github. |
