If I had to guess, it is the subtitle extractor job failing to read a TTF subtitle track.
For the record, metadata look ups can take quite a while for a series as large as One Piece.

Right now i'm doing the Anilist version because i tried the AniDB version and it filled the episodes out completely wrong (though that's probably because of the naming scheme i have in Sonarr)

Depends on where you initiated the scan. If you used the context menu for One Piece and scanned (replace metadata) that would only do One Piece. If you initiated from the library/home screen/dashboard it would do the entire library.

Ended up redownloading one piece so it would do the default metadata, it grabbed the 2023 version instead of the 1999 version, is there a way to only change the metadata for the series and not the episodes or do i have to do it manually

In Jellyfin, expand the context menu and "Identify". Enter the ID for 1999 One Piece from TMDB or whichever source and Jellyfin will automatically replace the 2023 metadata with the 1999 metadata.

Coming back to this thread, I tried that and while it works (and I have episode titles now) now there’s a duplicate of the season with no metadata at all so it’s really annoying to scroll through
I’ll post screenshots later if I remember

Try rescanning just the show and select replace all metadata. I wonder if it left copies of the previous entries when you identified the show.
