All 3 configurations you mentioned are feasible. A lot of users here have N100 based systems and have reported excellent performance for the tiny power usage. I ran just my 12100 for a while before deciding I wanted AV1 encoding and got an Arc GPU. If I were to plan this out again, knowing I would get an Arc GPU, I would have gotten a 5000 series Ryzen CPU instead of the Intel 12100.
