I'm just going to bump this solution. I was literally about to give up on jellyfin when I figured this out.
It looks like all the collections get created in a locked state by default, which is a pretty brain damaged behavior if you ask me: primary use for cases for these are 1) consolidating related content into a single icon 2) consolidating multiple media files for the same logical entity (different versions / encoding of one movie) into a single icon. I can't imagine why you would want to explicitly prevent these from fetching metadata when they get created.

I had the same issue. What worked for me was going to the collection > Edit Metadata and uncheck the "Lock this item to prevent future changes" checkbox. I don't know why it was checked by default.
After that "Refresh metadata > Search for missing metadata" and also check the "Replace existing images" checkbox.
