I can tell you from my own experience that your 5600G will perform well.
I use a small mini PC with a Ryzen 3400G for my system. And all movies run there under Windows 11 without any problems. Only some formats can cause problems. For example, the sound runs asynchronously. However, this depends on the encoder settings and the video format used.
I have the most problems with the m2ts, flv and MKV formats. All other formats run without problems. Nevertheless, I rip them all to mp4, as this works best in Jellyfin. And above all on all devices (smartphone, tablet, Android/Fire TV).
My system runs 24/7 and is very energy efficient.
